Skirt Steak Street Tacos

Ingredients

  • 2 lbs Skirt Steak (We choose Marble Ridge Farms wagyu!)

  • 1/2 cup Blues Hog Beef Marinade Mix

  • 2 cups Water

  • 6 oz Blues Hog ‘Ritas & Fajitas Seasoning

  • 1/4 cup Blues Hog Bold & Beefy Seasoning

  • Corn Tortillas

  • 1 large Yellow or White Onion, diced

  • 1 cup Cilantro, chopped

  • 2 cup Cotija Cheese

  • 2 Limes, wedged

Directions

  1. Mix Blues Hog Beef Marinade, water and fajita marinade until well blended. Set aside.

  2. Cut up skirt steak into small cubes.

  3. Place steak pieces and marinade mix in a sealable container for 30-60 minutes in the refrigerator.

  4. As the steak marinades, fire up the grill to 400ºF - 500ºF and let it get up to temperature.

  5. Remove the steak from its marinade and and dry off excess.  Season with Blues Hog Bold and Beefy Rub before transferring to the grill

  6. Cook steak in small batches, flipping frequently to get an even char on all sides. The steak should only need 3-5 minutes on both sides.

  7. After the steak is done, heat up your corn tortillas on the grill.

  8. Build your tacos how you like them with steak, onions, cilantro, cotija cheese and a splash of lime juice.
